My mom was the best cook I knew. Her amazing meals are deeply missed. One of the ways I try to reconnect with her is through her recipes. An easy recipe to make for parties is her version of Quaker’s Vanishing Raisin Oatmeal Cookies. See recipe my mom’s Oatmeal Chocolate Chip Cookies below.
Mom’s Quaker Oatmeal Chocolate Chip Cookie Recipe
Ingredients:
2 sticks butter (softened in microwave for 20 seconds)
1 Cup firmly packed light brown sugar
1/2 Cup granulated sugar
2 Eggs
1 teaspoon vanilla
1-1/2 cups(s) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cup(s) Quaker Oats (quick or old fashioned, uncooked)
1 cup chocolate chips
Preparation:
Heat oven to 350 Degree F.
In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
Add eggs and vanilla, beat well.
Add combined flour, baking soda, and salt; mix well.
Add oats and chips; mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 10 minutes or until light golden brown.
Cool 1 minute on cookie sheets; remove wire rack. Cool completely.
Store tightly covered.
Note: I have found a few things are key to a good cookie outcome.
1.) Let the butter come to room temperature overnight if you have the time. Softening too much in the microwave will create a flat cookie.
2.) Sift the flour when measuring it out.
3.) Also, using fresh ingredients does make a big difference. So if you don’t remember when you bought that baking soda, definitely buy a new one. Your taste buds will thank you.
